Well, 明蝦球means shrimp ball, usually in stir fry dishes. 百花球usually means shrimp paste balls, you first grind or pound the shrimp or crab or lobster. Then mix with flour, make it shape the paste into small balls and you get yourself some 百花球. As for 龍鳳球, it usually means shrimp or lobster and chicken, because 龍 is dragon, so somehow like shrimp and 鳯 Phoenix, which is a metaphor (?) to chicken. I don't know if this applies to UK but at least this is correct in HK LOL.
