The two characters at 3.51 are 棍功 which literally means “pole technique”. I can’t comment on Wing Chun or other practical aspects because I know not much about Chinese kung fu.
棍功- Rod skill
it is a weapon, so I prefer "rod " over "pole"
"Skill" focus on the ability to preform, "technique" focus on the application of a skill

I think I know why it used the term 「永春」 In the video, it mentioned 「少林永春」 it is an effort by some Shaolin style martial artists to cover the popular Wing Chun style under Shaolin's brand, to enforce the lotion of "All Kung Fu started from Shaolin style" The truth is, 詠春 style was not a branch of Shaolin style, it was named after a woman, since the Marjory of Shaolin masters were males, so it's not very convincing to have a Shaolin style named after a woman, so they changed it to 永春. It is an recent event, may be 30, 40 years ago when Wing Chun became famous internationally.
