「人遠情疏」 is a familiar term, it means : "if people are far apart, their friendship will fade." It is easy to remember because it contains the two characters of a common term「疏遠」( estrange) 

However, 「人走茶凉」 is not a familiar expression, ( I have never heard of it. Until today) Maybe these two phrases were originally coined together as a couplet, but one get more popular and became the only version we know, while the other was forgotten over time.

Base on the wording, we can imagine " the tea in the cups is warm when two friends are together talking over tea,  the tea will turn cold when one friend is gone. " it imply " friendship fade when friends are separated"

Out of sight, out of mind.

We use "Out of sight, out of mind" to describe "Avoid something as if it doesn't exist, instead of stressing oneself by dealing with it" 

It is not a good translation of  「人遠情疏」( people apart, friendship fade)
The Chinese expression for "Out of sight, out of mind" should be: 「眼不見為乾淨」( there's no problem, when we don't face it,) or a Cantonese slang 「冇眼屎乾淨盲」which mean the same.
